Creamy Yogurt Citrus Vinaigrette

This dressing is delicious over just about any greens, grains, or veg. It’s bright and tangy in flavor, smooth in texture, and does a beautiful job of clinging to the grooves of fresh, crisp lettuce.

Ingredients
  • 1/4 c. plain greek yogurt (low-fat or full-fat)
  • zest and juice of 1 lemon
  • 1/2 large or 1 small garlic clove, grated (use a rasp or zester)
  • 1-2 tbsp. white wine or white balsamic vinegar (see TIP A for more detail)
  • 2 tbsp. extra virgin olive oil
  • 2 tsp. mild Dijon or Düsseldorf mustard
  • 1 tsp. sugar or pure honey
  • 1/2 tsp. kosher salt
  • 1/4 tsp. fresh ground black pepper
Instructions
One: Combine:
  1. Combine all of the ingredients in a small bowl or mason jar and whisk (or shake) until fully blended. Dressing may be prepared up to 2 days in advance and stored in the fridge.

Tips

TIP A: Use 1 tablespoon vinegar if your lemon yields a lot of juice or you prefer a more smooth-flavored dressing. Use 2 tablespoons vinegar if you like a tangier dressing.
