Sunday Soup! (Not to Be Confused with Sunday Sauce)

If you’re lucky, then you might finally have a quiet Sunday on the horizon. Don’t get me wrong—the hustle-bustle of festivity-filled weekends is wonderful. But, at the same time, a long string of them can really make you relish a plans-free, stay-in-your-leisure-wear kind of Sunday!

I know many of you (like me) tend to do some shopping, chopping, cooking, and freezing on Sundays to prepare for your week. Not only does it allow you to go into your action-packed week a bit less stressed, but it actually makes the act of cooking way more enjoyable. Even I despise the weeknight dinner-prep frenzy. But I love nothing more than a slow Sunday afternoon, apron-clad in my kitchen, with amazing smells emanating from my oven and stovetop. This week’s recipe is made to create and celebrate just that sort of Sunday—my Slow-Roasted Sunday Tomato Soup.

It’s one of those recipes that takes almost no time to prep and all the time in the world to slow-roast and simmer. Well, not really that long, but long enough for you to do a couple loads of laundry or watch a few episodes of The Crown. I love recipes like this because the ingredients are simple, but they work and evolve together in the most magical of ways.
